Post-Thanksgiving let down has left me uninspired. Plus, we all have some sort of various illness, and now I’m catching the cough and cold my kids have. Because that’s what happens when your kids are sick and they still want you to kiss their little boogery faces. So now that we’ve talked about boogers, let’s talk food!
Monday: Turkey and vegetable soup, leftover super-delicious crack rolls
Tuesday: Pasta with pesto and salad
Wednesday: Lightened up chicken enchilladas
Thursday: Pulling from the freezer – beef stew
Friday: Not sure. Daddy is out with friends and so I’ll probably go with a crowd favorite like Kraft mac and cheese and hot dogs. Processed food Friday! With a salad for me.

I’m a terrible meal planner, but I have aspirations of being better! I’ll do it, you’ll see! I’m little sick of cooking right now, but one must persist – so – at least tonight we are having breakfast for dinner, where I’ll scramble up eggs with leftover ham that we’ll put on top of hash browns & onions (Simply Potatoes Hash Browns in the green bag are a staple in our house). We usually add some cheese to the eggs and eat it all topped with some kind of hot sauce or salsa. Leftovers will be wrapped in tortillas and either eaten the next day or frozen for future noming. I’ll be making a shepherds pie this week as well, maybe tomorrow. I have to go to the grocery store, but I’ve been so dang tired.
